What To Eat...

As the planning continues, I'm now wrestling with what to eat while on this epic adventure. I'd like to bring all my food and cook along the way. This, to me, has more of the adventure feel than stopping at restaurants along the way and whipping out the plastic.

I happen to have a good book, link to the left, that deals with back country cooking. It's a great book with a lot of simple recipes.

Being a vegetarian, however, complicates matters a bit. While the book does have a lot of ideas, such as beans and rice, that fit the vegetarian lifestyle, I pretty much had to skip the chapter on drying meats.

In my search for dried food that I can pack on the trip, I went to the local grocery store the other day. I found several prepackaged foods that would be perfect for camping.

Zatarain's Rice, for example, comes in several flavors, including beans and rice, and all you have to do to prepare is boil in water. There is also the Far East brand cous cous and other rice dishes that come as a meal in a bag.

Boil and forget it! I like that option.

  1. Wow, beans and rice. Sounds like a good start. Do we have a pan big enough for 3 or 4 people?

    Lets try and avoid any empty carbs like potato chips.

  2. You got something against beans and rice? I'm for sure not packing potato chips. They break! I think I have a pan big enough. The trick is getting it into my panniers.

  3. No I like the Idea of the beans and rice, I am having a hard time coming up with anything to eat. MRE's and canned food. I was talking to Randy about the possibility of frozen hot dogs or hamburger but we can't figure out how to keep it from spoiling.

    I try not to eat food high in preservative, MRE's. Rice is a dead carb, no nutrition, just keeps you from being hungry. I am not picky, just trying to be creative.

    Beans are a good protein.

    Corn on the cob but it takes up room.

  4. Rice is not a dead carb! Maybe white rice but whole grain or brown rice is not. It has tons of protein. You are actually going to need carbs anyway for this trip.

    Frozen anything is not going to work. If you want meat, your options are going to be dried or smoked meats that don't have to be refrigerated. This means smoked sausage, hard salami, Canadian bacon. These will keep for up to a week. Also there's jerky which will keep longer than that.
