Nuts! Food revolution?

vegitariens After being diagnosed with type-two diabetes, I have taken a real good look at food. After page upon page on the latest scientific studies on diet and exercise, I have learned this.

Food is not bad, meat is good, veggies are good, fruit is good, eggs are good, bread is bad, cookies are bad, soda is bad, sugar is bad and alcohol is OK in certain forms.

Meat, protein is needed by the body to build and maintain muscle tissue. The best way to ensure that the body gets the proper amount of protein is by eating meat. Now one can over do it a little, too much meat leads to high cholesterol. We can't live forever with high cholesterol can we, so watch your red meat intake. I have been told your meat should be no larger than a deck of cards. I can deal with that.

The majority of your carb intake should be from vegetables (told to me by a nurse). These carbs are good carbs and should be eaten and enjoyed.

Breads, bad for you, bad, bad, bad.

Fruits and nuts, are great for you. Almost nature's gift for life. Fruit has everything your body desires but protein. Just don't eat too much, the natural sugars in fruit will catch up with you.

From what I understand about all of the crap I have been reading, the best and healthiest diet is one limited in carbs, high in protein and fruit. It is that simple. It is hard to stick to a low-carb diet but it is easy to make healthy choices. I myself have given up soda, sugar foods and for the most part bread.

It is also my understanding that there are a fare amount of dangerous preservatives in processed food. These preservatives contain so much poison that their use is limited. I have a friend who owns a bakery and had to fill a large order of bread for a local university. Upon purchasing a drum of preservatives, he had to sign a waiver stating he would not overuse and understood the dangers of the preservative. Now that sounds like something I want to eat. After the order of bread was finished, he never used the rest of the drum.

Processed foods are what is making us sick. The additives and preservatives are no good. Fresh made foods are the best by far but no one needs me to tell them that. I have not had a ready made freezer dinner for months, no more TV dinners for me. My wife has been cooking fresh or frozen veggies and fresh meat. No lunch meat, hot dogs or mac and cheese. Speaking of cheese, thats about the only processed food I eat anymore.

Here is a sample of what I eat a day now.

Eggs in the morning.

For lunch I eat dinner leftovers.
Green beans and beef roast.

Dinner we eat Chicken and a salad or a different veggie.

Believe it or not I don't eat snacks, if I do it is pork rinds, zero carbs. I might have some sugar-free Jello or pudding.

I drink lots of water, no coffee and a glass of tea a day. Green tea.

After making the switch from the donut shop to fresh foods, I could tell the difference. At first there was some brain fog and cravings but it all cleared up. My blood sugar has leveled out to near perfect numbers, without medication I might add.

With the way the clock ticks so fast these days, people (like me) choose the easy route. Stop at a gas station pick up a bag of chips or cup cakes and a pop for lunch. Also we tend to reward ourselves with a large dinner at the end of the day. This is why diabetes cases are climbing at an alarming rate. Between poor choices and lack of time for food preparation, we are planting a foot in the grave way too early.

As for what the meat industry does to the environment, I can't answer that. I find it hard to believe we would be better off with herds of cattle roaming the forest unattended. Chickens running the streets and pigs in Central Park. I do think that there is too much meat consumption going on. When we go out to eat we head for the steak house where they serve up a huge steak. A deck of cards, thats how big your meat serving should be. No bigger.

A man can't live by bread alone.
